Instructions
Step 1
Heat 1/2 tbs oil from sun-dried tomatoes in a large pot over medium heat. Add the onion and garlic to the pan, sauté for 2-3 minutes until softened.
Step 2
Add the tomato paste and sun-dried tomatoes, cook for another 2 minutes.
Step 3
Mix in the stock, cream cheese and herbs then bring the mixture to a boil.
Step 4
Add the pasta, reduce the heat and cook for 10-12 minutes until the pasta is al dente.
Step 5
Add the Parmesan and stir until melted, then mix through the spinach.
Step 6
Serve with extra Parmesan and fresh basil.
