Quick Tomato Rice Recipe

Ingredients
3 servings
3tomatoes
medium to large
1onion
medium-sized
1 ½ teaspoonsGinger Garlic Paste
1green chilli
finely chopped
½ teaspoonmustard seeds
0.5 inchcinnamon
2green cardamoms
2cloves
1 strandcurry leaves
¼ teaspoonturmeric powder
½ teaspoonred chilli powder
½ teaspooncoriander powder
1 teaspooncumin powder
¼ cupcoriander leaves
chopped
1 ½ cupswater
2 tablespoonsoil
salt
as required
1 cupBasmati rice
or normal rice
½ tspcumin seeds
½ tspfennel seeds
Instructions
Step 1
Rinse the rice in water and soak it for 20 to 30 minutes.
Step 2
In a pressure cooker, heat the oil and add mustard seeds and crackle them.
Step 3
Add Cumin seeds, Fennel Seeds, cinnamon, cardamoms and cloves.
Step 4
Now add the finely chopped onions and sauté until the onion turns translucent
Step 5
Add Ginger garlic paste and sauté until the raw smell goes.
Step 6
Now add the green chillies and curry leaves and mix it well.
Step 7
Now add the finely chopped tomatoes and Sauté well.
Step 8
Now keep the stove in low flame and add turmeric powder, red chilli powder, coriander powder and cumin powder and mix it well
Step 9
Sauté the tomatoes until they soften and become pulpy with oil releasing from the sides.
Step 10
Add the soaked rice and gently mix the rice well.
Step 11
Add 2 cups water and salt as required and mix it well
Step 12
Now sprinkle to coriander leaves and pressure cook for 1 whistles on medium flame if you are using Basmati Rice. If you are using normal boiled rice then cook it for 2-3 whistles.
Step 13
When the pressure settles down, remove the lid and now its time to serve the aromatic and tasty tomato rice.
