In Texas, Red Snapper from the Gulf of Mexico is loved for its lean, moist, firm texture and distinctive sweet, nutty flavor. The raw flesh is pinkish and turns lighter when cooked. If Red Snapper is unavailable, substitute it with black drum, grouper, etc. This recipe features a smash burger served on toasted brioche and crunchy, refreshing iceberg cabbage leaves, creamy avocado slices, and melty American Kraft cheese topped with sea asparagus. When added to minced fish, Tartar sauce works wonders. It preserves the fish’s juiciness and brings the flavor characteristics we love so much — it has everything that goes well with fish. The egg yolks provide just the right amount of fluffiness. Sea Asparagus is a somewhat exotic ingredient from Hawaii. It can sometimes be found at Central Market in Central Texas. It’s a delightfully salty, juicy, crunchy green vegetable that is good in salads and toppings—especially on avocado toast. If sea asparagus is impossible to find, substitute it with micro greens of your choice. The dish pairs well with a cold chardonnay. It's a real summer treat!

Instructions

for fish patties

Step 1
Mince fish filet and place in a bowl.
Step 2
Chop scallions and add to the bowl.
Step 3
Add egg yolks and Tartar sauce and combine all ingredients. Season with salt and pepper to your taste.

Melt butter in a frying pan over medium heat.
Step 5
Divide the fish mix into portions and shape them into balls. Place each portion on a hot skillet and smash with a silicon spatula. Cover with a lid, lower the heat, and cook for a few minutes until the top of the patty is no longer shiny.

Flip the patties and cook the second side until golden. Turn off the heat, cover each patty with a slice of cheese, and cover with a lid to melt the cheese.

Toast brioche slices and place them on serving plates.
Step 8
Slice the avocado and make a thin layer on top of the brioche. Place an iceberg leaf on top.
Step 9
Place a hot fish burger with its melted cheese side down and cover it with another slice of cheese. Let the cheese slightly melt and sprinkle with sea asparagus or micro greens. Enjoy with cold white wine!
