Instructions

Step 1
Preheat oven to 180°c
Step 2
Tip the sweet potatoes, Iemongrass, ginger, garlic, chilli, coconut milk and stock into a deep roasting tin or casserole dish, then transfer to the oven and cook, uncovered, for 45 minutes
Step 3
Prod the sweet potato - it should be soft throughout - then remove the dish from the oven. Immediately add the straight- to-wok noodles and submerge in the liquid. Leave to sit for 5 minutes, then stir in the lime juic
Step 4
Scatter over the coriander and serve immediately in deep soup bowls
