Green eggs with halloumi

Instructions

Prepare

Step 1
Cut the halloumi into small cubes

Trim and finely slice the spring onions

Remove the coarse stalks from the kale, and roughly shred

Finely chop the herbs

Lightly beat the eggs in a bowl, seasoning with salt and pepper

Cook the halloumi and veg

Heat a little oil in a medium frying pan over a fairly high heat

Sizzle the halloumi until starting to brown

Turn, and cook until golden

Add the spring onions and kale, and sweat until wilted, stirring occasionally

Stir in the peas, and stir occasionally for 3-4 minutes until tender

Tip onto a plate and set aside

Cook the eggs

Lower the heat

Add a little more oil or a knob of butter

Pour in the beaten egg, and scramble until cooked to your liking

Serve

Stir the halloumi and veg back into the pan to warm through

Divide between warmed plates

Sprinkle over chopped herbs and dukka, if using
