Ingredients
4 servings

2 tablespoonsvegetable oil

1 poundboneless skinless chicken thighs
cut in 3/4 inch chunks

1red bell pepper
thinly sliced

3stalks celery
thinly sliced

2 teaspoonsminced garlic

2 teaspoonsminced ginger

3 tablespoonssoy sauce

1 tablespoonsugar substitute

2 teaspoonscider vinegar

¾ teaspooncrushed red pepper flakes

¼ teaspoonblack pepper
¼ cuproasted cocktail peanuts

1 teaspoonsesame oil
Instructions
Step 1
Heat oil in large skillet or wok over high heat, until nearly smoking hot
Step 2
Add chunks of chicken to hot skillet. Saute until golden brown, about 5 minutes.
Step 3
Reduce heat to medium-high. Add bell pepper, celery, garlic, and ginger and saute for 3 minutes.
Step 4
Add soy sauce, sugar substitute, cider vinegar, red pepper flakes, and pepper to skillet and continue sauteing until bell pepper is tender, about 4 more minutes,
Step 5
Stir peanuts into skillet and saute for 1 additional minute.
Step 6
Stir in sesame oil just before serving.
