Goan style King prawn curry with basmati rice

Instructions

Step 1
Peel and dice red onion. Saute with pinch of salt for 10-12 min.
Step 2
Add basmati rice to 300ml cold water and bring to boil. Then cover and heat on low for 10-12 min.
Step 3
Whilst rice is cooking peel and roughly Chop ginger and garlic. Add to pestle and mortar with ground coriander, ground cumin, chilli flakes, cayenne pepper and salt and grind to a smooth paste
Step 4
Once onion is soft add spice paste and tomato paste to onion and cook 4-5 min.
Step 5
Drain King prawns then add to the pan with tamarind paste cider vinegar and 1tsp sugar and cook 2-3 min.
Step 6
Add spinach with 60ml cold water and cook 2-3 min until spinach is wilted and sauce has thickened.
