Step 1
cook the guanciale or pancetta until crispy, then set aside
Step 2
now we prepare the carbonara sauce: in a large bowl, mix your egg yolks with the pecorino romano cheese. the mixture should be thick and pasty. we will later add pasta water. season the mixture with pepper.
Step 3
cook your pasta to your liking, I recommend regular spaghetti. don't forget to grab a cup of the pasta water before draining.
Step 4
add the pasta water to your mixture until it's sauce consistency. not too runny but not too thick. if you added too much water, you can add more cheese to balance it out.
Step 5
now add the pasta and the guanciale or pancetta to the bowl and mix well. enjoy! x
