Instructions
Step 1
Cut sweet potato length-wise, place them cut side down on the baking sheet. Drizzle on oil, salt and pepper. Bake for 20 minutes at 200 degrees Celsius
Step 2
Cook chicken in skillet pan with some oil with Italian seasoning, paprika, salt and pepper
Step 3
Once cooked potatoes are cooked, scoop out the filling and place into a bowl.
Step 4
Add chicken to the potatoes, along with the cherry tomatoes, pesto, basil leaves
Step 5
Add filling back into potato skins. Put it back into the oven for 10 minutes.
Step 6
Finish with parmesan cheese, some left over basil.
Step 7
Make a quick mixed salad with salad leaves, cherry tomatoes and pumpkin seeds. Drizzle with olive oil and balsamic glaze
