Instructions
Step 1
Heat a wide pan on a medium heat and add the olive oil and onions to soften for 3-4 minutes
Step 2
Add the garlic, peppers, paneer and spices.
Step 3
Fry on a medium heat for approximately 5 minutes, stirring to cat the paneer and peppers with the spices.
Step 4
Add the tinned coconut milk and tinned tomatoes.
Step 5
Stir to combine and simmer for 20 - 30 minutes on a. low to medium heat, allowing the liquid to reduce.
Step 6
Stir in the spinach and cook for 5 minutes until heated through.
Step 7
Serve with coriander, yoghurt and flaked almonds.
