1eggplant
1red bell pepper
400grusset potatoes
4 clovesgarlic
minced, for starter
2green onion
2garlic
minced, garnish
1 tbpstarch
mix with 2 tbp of water
white vinegar

Instructions
Step 1
chunk eggplants, put salt and a few drops of vinegar, leave aside.
Step 2
cut peeled potatoes in chunks, coat in oil, fry in air fryer 400 F, 10min
Step 3
coat eggplant in starch and oil, fry on 400 for 8-10 min. Might need to do in batches.
Step 4
fry bell pepper (torn to pieces and coat in oil) with potato for another 5min.
Step 5
fry green onion and garlic, put in vege, pour in mixed sauce, bring to boil on medium high.
Step 6
Pour in starch slurry until thickened. Garnish with extra garlic.
