Instructions
Step 1
Heat the olive oil in a large non-stick skillet, add the onions and eggplant and cook for 8 minutes until soft.
Step 2
Add the pork and saute for 5 minutes until starting to brown. Then stir in the bell peppers and cook for 3 minutes until soft
Step 3
Now sprinkle over the curry powder and stir for a minute. Pour in the tomatoes and water, stir together then cover and simmer gently for 5 minutes.
Step 4
Season with salt and pepper and serve with basmati rice, topped with chopped cilantro.
