Step 1
Preheat oven to 220c
Step 2
Finely chop onion and chilli. Put the tomato, onion and chilli onto baking tray and roast for 10 minutes until blistered and softened.
Step 3
Peel garlic and put in food processor with remaining roast veg. Add half of coriander and half lime juice, season and blend until smooth.
Step 4
Combine beans, chipotle paste, and ground cumin in a saucepan with a splash of water and simmer for 5 mins until thickened. Roughly mash half the beans with a fork, stir in the remaining lime juice and season.
Step 5
Warm the tortillas under the grill to crisp, spread the beans over the top and add salsa and feta. Serve with rest of the coriander.
