1red bell pepper

1 teaspoonsesame oil

Instructions
Rinse the rice:
Step 1
Rinse the rice under cold water until the water runs clear. This removes excess starch and helps the rice cook better.
Sauté the vegetables:

Turn your Instant Pot to the "Sauté" setting. Add the olive oil. Once hot, add the diced onion and cook for about 2-3 minutes until it softens. Add the minced garlic and sauté for another minute until fragrant.
Add vegetables:

Add the frozen peas and carrots mix, diced red bell pepper, and frozen corn. Sauté for another 2 minutes to combine everything.
Add rice and liquid:

Add the rinsed rice to the pot, stirring to coat the rice with the oil and vegetables. Then add the water.
Cook the rice:

Cancel the "Sauté" setting. Close the lid and set the Instant Pot to "Pressure Cook" or "Manual" on high pressure for 4 minutes.
Prepare Teriyaki Sauce:

While the rice is cooking, in a small bowl, mix together the soy sauce, maple syrup, rice vinegar, sesame oil (if using), and ground ginger.
Quick release:

Once the cooking time is up, do a quick release by carefully turning the steam release handle to the venting position. Once the pressure is fully released, open the lid.
Add sauce and mix:

Pour the prepared teriyaki sauce over the rice and gently mix everything together until well combined.
