Instructions
Step 1
- separate the cilantro leaves from stem ( put stems to the side for later)
Step 2
blend the cilantro leaves with just enough water for the leaves to break down
Step 3
heat up pot with some oil and add the diced onions. Cook until mostly translucent then add the garlic until fragrant
Step 4
add the cilantro puree to the pot and the aji amarillo paste and let it simmer for about 30 seconds
Step 5
add about 1 liter of water or chicken broth to the pot ( as much broth as you would like but adjust measurements to taste)
Step 6
add in cubed chicken breast and the stems of the cilantro (make sure to position stems in a. way that is easy to remove)
Step 7
once chicken is cooked through remove cilantro stems
Step 8
add the chopped potatoes, carrots, and rice to the pot and let it simmer until veggies and rice are cooked through (about 15-20 minutes)
Step 9
Salt to taste and enjoy
