Chicken Soup with Lime and tortillas

I often make this soup using rotisserie chicken. It's nutritious, heart healthy and low cal. I also use a whole jalapeno because we like spicy food. If you don't have tortilla chips on hand, and are not watching calories you can fry a tortilla cut into small strips and sprinkle that on top of soup. An avocado diced can be also be added as a garnish.

Step 1
Heat olive oil and sauté garlic and onions without browning. After 2 mns add zucchini. Cook a few more mns and add broth, tomato, jalapeño, bay leaf, cumin and red pepper flakes. Bring to boil and cook 5 mns. Add chicken and simmer 10 mns. Add cilantro, green onions and lime juice. Check seasoning for more salt or pepper and serve with tortilla chips.
