Ingredients
1 servings
1slice sourdough
toasted
olive oil
0.5shallot
diced
0.5 clovegarlic
minced
6cherry tomatoes
halved
1 Tbsptomato paste
½ Tbspapple cider vinegar
1 tspmustard powder
½ tspground cumin
½ tsppaprika
1 tspdried thyme
salt
black pepper
100gbeans
such as cannellini, drained and rinsed
greens
such as spinach or rocket
parmesan
grated, to garnish, optional
Instructions
Step 1
Heat oil in a frying pan, then add in the shallots. Cook for a minute or two, then add in the tomatoes and garlic.
Step 2
Add in the tomato paste, vinegar, mustard, cumin, paprika, thyme, and season with salt and pepper. Add in some water to loosen the mixture up a bit.
Step 3
Add the beans and stir to combine. Allow mixture to reduce for a few minutes until thickened.
Step 4
Add in the greens and once they wilt remove from the heat
Step 5
Serve mixture on top of the slice of toast. Garnish with grated Parmesan, if desired.
