Leftover Spinach Pasta

You don’t need any fancy pasta machine for this recipe just some forgotten spinach from the back of the fridge some bread flour and an egg . Quick and easy to make and a great way to use up that leftover spinach .

Instructions
Step 1
If using baby spinach make sure it’s washed and dried then add it to a food processor with the egg and process . Add the flour and process again until it forms a dough. ( if using cooked spinach squeeze out the moisture)

Step 2
Flour a surface then knead the dough for about 10 minutes until it’s supple then cover it and let it rest 30 minutes
Step 3
Use a scissors to cut out thin shapes then cook in a pot of boiling salted water for a few minutes or until it’s the consistency you like. Add any sauce you like I like to fry garlic in butter add the pasta a ladle of pasta water and some Parmesan then season with salt pepper and add some tomatoes . Enjoy .
