A delicious version of Hello Dollies in a healthier, filling oat bar. Feel free to customize spices or toppings! These bars are wonderful straight out of the fridge for a chewier bar, or served warm with a cup of coffee. Cut into bars, wrap in paper and share if you’d like!

Ingredients

2bananas
ripe
1 cupmilk
or almond milk
¼ cupalmond butter
¼ cupmaple syrup
1 teaspoonbaking powder
1 teaspooncinnamon
½ teaspoonsalt
2 cupswhole rolled oats
1 cupchopped pecans
½ cupdark chocolate chips
½ teaspoonvanilla extract
2 tablespoonsbrown sugar
2 tablespoonsunsweetened flaked coconut
¼ cupunsalted butter
melted
Instructions
Step 1
Preheat the oven to 350°F and grease an 8x8 baking dish.
Step 2
In a large bowl, whisk together the mashed banana, milk, almond butter, maple syrup, vanilla, and butter. Add the baking powder, cinnamon, and salt and whisk again.
Step 3
Fold in the oats, ¾ cup of the pecans, and ½ cup of the dark chocolate chips. Pour the mixture into the prepared baking dish and smooth into an even layer.
Step 4
Top with the remaining ¼ cup pecans, the brown sugar, and coconut flakes
Step 5
Bake for 40 minutes, or until the topping is crisp and the middle is set. Remove from the oven and let cool for 10 minutes before serving
Step 6
Let cool completely to store, and wrap well in wax paper.
