Instructions

Step 1
Julienne carrot and radish. Add ginger, white vinegar, 1tsp honey, and 2 tsp water to a bowl and stir to dissolve honey. Add radish and carrot and toss to combine. Set aside.
Step 2
Bring a medium pot of water to the boil for the noodles.
Step 3
Thinly slice spring onion. Pick coriander leaves, and finely chop the stems. Crush garlic.
Step 4
Combine garlic, sriracha, 1.5 tbsp water, soy sauce, and 2 tsp honey in a bowl and season with pepper.
Step 5
Heat a drizzle of oil in a medium deep fry pan over high heat. Cook beef, breaking up lumps, for 4 mins until browned
Step 6
Cook noodles in pot for 3 mins or until just tender. Add spinach and stir until wilted. Drain then rinse under water to prevent sticking.
Step 7
Add coriander stems to mince and cook, stirring, for 30 secs until fragrant. Add sauce mixture and stir until combined.
Step 8
Add noodles and spinach to mince and toss to combine. Season to taste with salt and pepper.
Step 9
Divide noodle mixture, and the pickles with liquid between bowls. Scatter with spring onion and coriander leaves.
