Spicy Seafood Yaki Udon (My New Favorite Stir-fry Udon!)

This mouth-watering yaki udon combines chewy udon noodles, juicy shrimp and fresh vegetables with a fiery homemade sauce. It's perfect for lunch or dinner, and can be customized with your favorite seafood.

Ingredients
2 servings
2 ptnsudon noodles
cooked for 1-2 minutes less than the time stated on the packaging and drained
250gshrimp
shells on, or mixed seafood of choice
2 pinchessalt

1 tspcornstarch

2 Tbspcooking oil
1garlic clove
1 tspginger root
0.5yellow onions
medium size
1bell pepper
or piman
0.5Japanese leek
white part
1eggplant
medium size
1 tspdried red chili pepper
thinly sliced
ground black pepper
to taste
powder
dried, green, aonori, for topping
sesame seeds
for topping
1 tspsoy sauce
1 Tbspsake
½ Tbspchili bean sauce
tobanjan
¼ tspcurry powder
1 tspchicken bouillon powder
chinese - style, granules
½ Tbspoyster sauce
½ tspchili oil

Instructions
Step 1
Cook udon noodles slightly less than package instructions, then wash and drain. Skip if using pre-boiled udon.
Step 2
Remove and save shrimp shells. Devein shrimp, season with salt and cornstarch, then rest.
Step 3
Heat oil in a wok on low. Add shrimp shells to infuse oil while preparing other ingredients.
Step 4
Wash and dry shrimp thoroughly.
Step 5
Prepare vegetables: dice garlic and ginger, slice onions, bell pepper, and leek, cube eggplant.
Step 6
Mix sauce ingredients in a bowl and set aside.
Step 7
Remove shrimp shells from wok. Increase heat to medium-high.
Step 8
Stir-fry dried red chili pepper, garlic, ginger, and onion until onion softens.
Step 9
Add shrimp and remaining vegetables. Stir-fry until shrimp are almost cooked.
Step 10
Add sauce and mix well.
Step 11
Add udon noodles and stir-fry until warm and coated with sauce.
Step 12
Serve and garnish with black pepper, dried green laver powder, and sesame seeds.
