Instructions
Step 1
In a frying pan, sauté the olive oil and red onion for 3 minutes until golden.
Step 2
Add the brussel sprouts, bacon and chickpeas to the pan and leave to cook for 10 minutes, stirring occasionally.
Step 3
Add the almonds and cook for another 2 minutes.
Step 4
Stir through the spinach and balsamic vinegar. Transfer to a bowl and serve.
