250 gmschicken breast

½ tsppaprika

½ tsponion powder

½ tspgarlic powder

½ tsporegano

1 sprinklesalt

1 sprinklepepper

0.5 bunchasparagus
ends removed and cut into 2cm long pieces

2 sliceswholegrain bread

15 mlsextra virgin olive oil

1cos lettuce
chopped

0.5avocado
diced

50 gmsparmesan cheese
grated

20 mlslemon juice

1clove of garlic
crushed

10 gmsdijon mustard

10 mlsextra virgin olive oil

10 mlswater

5 mlsworcestershire sauce
Instructions
Step 1
Season chicken with paprika, onion powder, garlic powder, oregano, salt and pepper.
Step 2
Heat a non-stick pan over medium-high heat. Cook chicken for 5-8 minutes each side or until cooked through. Set aside to cool and then slice.
Step 3
Add asparagus to a bowl and cover with boiling water for 10 minutes. Drain and set aside.
Step 4
Toast bread and while hot, spray or drizzle with olive oil. Then, cut into smaller cubes to make croutons.
Step 5
Combine all the dressing ingredients.
Step 6
Combine the lettuce with avocado, asparagus, parmesan cheese and homemade croutons. Divide into two serves and store leftovers in the fridge.
