Broccoli, carrot and red onion crustless quiche

This healthy, easy, low carb and delicious crustless quiche is a great vegetarian dish on its own and makes a very good veggie side to meat dishes.
It has has become a regular meal at home.

200gbroccoli
3carrots
large, grated
2red onions
medium, chopped
2cloves garlic
chopped
5eggs
1 cupmozzarella
grated, or cheddar
3 Tbspextra virgin olive oil
Herbs and spices
3 tspsmoked paprika
can be sweet or spicy, to taste
½ tspturmeric
1 tspdried oregano
1 tspdried thyme
½ tspdried basil
1 tspsalt
½ tspground black pepper
1 tspmsg

Instructions
Step 1
Preheat the oven to 180 degrees C

Crack the eggs into a large bowl and beat them together with the garlic and all herbs and spices

Add the rest of the filling ingredients to the bowl and mix well with a spatula

Line an oven proof dish with parchment paper ( I used a round xxx cm Pyrex glass dish)

Add the contents of the bowl and firmly flatten them with a spatula

Sprinkle on top the topping ingredients. You can add a few puffs of olive oil spray if you want a golden top

Bake in fan oven at 180 degrees C for 20-30 minutes
Step 8
If you like a crispy top, put under hot grill for 2-3 minutes. Leve a safe distance between the grill and the dish, to prevent the parchment paper from catching fire.
Let it cool down in the oven with the door open so it sets completely, before unmolding it.

It’s delicious both warm or cold. Enjoy!
