1beetroot
small cooked, diced

1 cuptinned chickpeas
drained and rinsed

0.5red onion
small, finely sliced

0.5cucumber
chopped

0.5carrot
grated

2 Tbspmint leaves
chopped

2 Tbspdill leaves
chopped

2 Tbspfeta crumbled
Vinaigrette
Instructions
Step 1
Combine vinaigrette ingredients in a glass jar and close the lid. Shake until well combined.
Step 2
In a mixing bowl, add all the other ingredients except for the feta, giving it a loose mix.
Step 3
Add in the vinaigrette and toss well.
Step 4
Top with the crumbled feta and serve.
