Step 1
Preheat smoker to 275° F
Step 2
Remove heads of peppers and place on grate
Step 3
Peel garlic and also add to grate
Step 4
Remove top and bottom of onion, peel, and slice into two halves
Step 5
Smoke habaneros, onion, and garlic until peppers are blistered (about 30 minutes)
Step 6
Blend habaneros and water. Just pulse until pureed
Step 7
Add garlic, onion halves, and apple cider vinegar to the blender and puree.
Step 8
Add all ingredients to a large saucepan
Step 9
Cover and bring to boil
Step 10
Reduce heat and simmer for 30 minutes
Step 11
Bottle BBQ sauce and store in fridge
