2 tablespoonsapple cider vinegar
1 tablespoonbrown sugar
1 teaspoonallspice
1 teaspoonthyme

to adjust consistency

Instructions
Step 1
1. In a blender, combine peaches, peppers, onion, garlic, and ginger. Blend until mostly smooth.
Step 2
2. Add lime juice, vinegar, brown sugar, allspice, thyme, cinnamon, nutmeg, and salt.
Step 3
3. Blend again until fully smooth, adding water as needed to reach desired consistency.
Step 4
4. Pour the mixture into a saucepan and simmer over medium heat for 10–15 minutes, stirring occasionally.
Step 5
5. Let cool, then transfer to a bottle or jar. Store in the fridge for up to 2 weeks.
