Instructions
Step 1
In large pot, add chicken broth, rotel (I puree the rotel, my family doesn't like chunky tomatoes), onions, chicken, garlic, chili powder, and cilantro
Step 2
Turn on heat to high and bring to a boil, turn down and simmer until chicken is cooked through.
Step 3
Remove chicken and shred. Add shredded chicken back to pot
Step 4
Add frozen corn and simmer.
Step 5
When ready to serve, remove from heat and add the juice of the 3 limes.
Step 6
Serve with tortilla chips, cheese, sour cream, and avocado.
Step 7
Leftovers can be frozen.
