lean and ground
1egg
large and beaten
2 clovesgarlic
minced
1 inchginger
fresh and grated
2green onions
chopped
30mlsoy sauce
low sodium
15mlsesame oil
5mlSiracha Sauce
adjust to taste
½ cupbreadcrumbs
whole grain if possible
200gbroccoli florets
1red bell pepper
sliced
1carrot
julienned
1zucchini
sliced
15mlolive oil
Instructions
Step 1
In a bowl, combine he ground turkey. beaten egg. half of the minced garlic, ginger, green onions, 1 tablespoon of soy sauce, breadcrumbs, and Sriracha sauce. Mix well.
Step 2
Form the mixture into small meatballs about 1 inch in diameter. Heat the sesame oil in a skillet over medium heat and cook the meatballs until browned and cooked through, about 10 - 15 minutes, turning occasionally.
Step 3
In another skillet, heat the olive oil over medium heat. Add the remaining garlic, broccoli, red bell pepper, carrot, and zucchini. Stir-fry until the vegetables are tender-crisp, about 8 - 10 minutes.
Step 4
Drizzle the remianing sou sauce over the vegetables during the last few minutes of cooking.
Step 5
Serve the meatballs with the vegetable stir-fry on the side or mixed together.
