Step 1
Prepare the Beef: Season the beef chunks with salt and pepper.

Sauté (Optional): In a skillet, sear the beef on all sides for a richer flavor. This step is optional but recommended.

Add Ingredients to Slow Cooker: Transfer the beef into the slow cooker. Add the chopped onion, garlic, beef broth, diced tomatoes, carrots, potatoes, celery, green onions, bean sprouts, fernbrake (or extra shiitake mushrooms), Korean chili powder, soy sauce, and sesame oil.
Step 4
Cook: Cover and cook on low for 8 hours or on high for 4-5 hours, until the beef and vegetables are tender.
Step 5
Serve: Remove the bay leaf, season with additional salt and pepper if needed, and serve with rice.
