Balsamic Caprese Grain Bowl

Instructions

Step 1
A few hours in advance, mix together garlic, balsamic vinegar, olive oil, maple syrup, dried basil, and salt. Set aside approximately ⅔ of dressing for later.
Step 2
Marinate raw chicken in remaining ⅓ of dressing for a few hours.
Step 3
Add oil to skillet and heat over medium-high heat. Add the chicken and cook until done and slightly charred, 5-6 minutes per side. Then transfer to plate to cool.
Step 4
Cut grape tomatoes into halves or thirds. Roll fresh basil up crosswise and thinly slice into small strips. Thinly slice the avocado.
Step 5
Cut chicken into strips or cubes.
Step 6
Add quinoa and rice mixture to bowls, filling about halfway. Add to bowls the chicken, mozzarella, tomatoes, and basil. Scoop out and add avocado. Drizzle with remaining ⅔ of dressing.
Step 7
If storing leftovers, mix together all ingredients aside from avocado and ½ of dressing and pack into containers. When serving later, warm slightly in microwave and top freshly with avocado and remaining ½ of dressing.
