Ingredients
2 servings
150gwhole-grain pasta
or chickpea/lentil pasta
1 cantuna in olive oil
drained, reserve some oil
1 cupcherry tomatoes
halved
0.5cucumber
diced
0.25red onion
thinly sliced
¼ cupolives
sliced, optional
2 Tbspextra virgin olive oil
1 Tbsplemon juice
1 tspgreek yoghurt
½ tspdried oregano
1 Tbspfresh parsley
or basil, chopped, optional
salt
to taste
black pepper
to taste
Instructions
Step 1
Cook the pasta according to package instructions. Drain and rinse under cold water to cool.
Step 2
In a large bowl, mix the cooked pasta, tuna, cherry tomatoes, cucumber, red onion, and olives.
Step 3
In a small bowl, whisk together olive oil, lemon juice, yoghurt, oregano, salt, and pepper. Adjust seasonings as needed.
Step 4
Pour the dressing over the salad and toss to combine.
Step 5
Garnish with fresh parsley or basil if desired.
Step 6
Serve immediately or chill for 30 minutes before serving.
