Trim the Venison well, removing all the membrane. Cut the trimmed Venison into bite size pieces

In a large heavy frying pan cook the diced onion. Add the cubed Venison to the sauteed onions and brown the Venison on all sides.

Add the 2 packages of dry soup mix and 2 cups of the beef broth to the browned Venison.

Cover the mixture and cook for 30 minutes, stirring occasionally.

In a Large soup pot, add the browned Venison mixture to the large soup pan. Add the remaining 2 cartons of beef broth.

Cut the celery into small pieces and add to the soup pot.

Cut the baby carrots into small pieces and add to the soup pot.

Cover the soup pot contents and cook for 2-3 hrs.
Step 10
Take 1 cup of the hot soup broth and whisk in the 2 packages of McCormick Gravy mix until blended well. Slowly whisk this into the soup pot mixture.
Step 11
While the soup is cooking, cook the (1/2 box of) barley and set it aside. You'll be adding this later to the soup. Follow the directions on the box.
