Instructions

Step 1
Roast butternut squash cubes
Step 2
Fry onion & pepper until soft
Step 3
Add chilli and garlic
Step 4
Add curry paste & ginger & fry for 1 min
Step 5
Add lentils, tomatoes and coconut milk
Step 6
Add butternut squash, spinach & coriander and simmer for 20-30 mins
Step 7
Serve with coriander, rice and a lime wedge
