Step 1
Prepare the Pork Ribs: Cut the ribs into bite-sized pieces and rinse them in cold water. Boil the ribs in hot water for 5 minutes to remove odors and impurities, then rinse in cold water.

Cook the Ribs: Add the rinsed ribs to a pot with 8 cups of water. Simmer over medium heat for 30 minutes to tenderize the ribs and enhance the broth.
Step 3
Prep the Kimchi and Vegetables: Cut the kimchi into bite-sized pieces. Slice the onion and chop the green onions.
Step 4
Make the Stew: Add the cut kimchi and one cup of kimchi juice into the pot with the simmering pork ribs. Stir in 1 tablespoon of minced garlic, 1 tablespoon of red pepper flakes (gochugaru), half a tablespoon of sugar, 2 tablespoons of soy sauce or fish sauce, and a pinch of black pepper. Mix well, cover the pot, and let it simmer for another 20 minutes.
Step 5
Add the sliced onion and green onions, and cook for another 10 minutes. Taste and adjust the seasoning with salt if needed.
