Ingredients

1 Tbspolive oil
0.5 lbmild italian sausage
0.5 lbspicy italian sausage
1 ½ cuponion
finely chopped
1 Tbspgarlic
finely chopped
3 Tbspharissa
4 ozdry white wine
8 cupschicken broth
2 cupsmarinara sauce
4basil leaves
plus some for garnish
6 ozlasagna noodles
uncooked, broken into 3/4" pieces
¾ cupshredded mozzarella cheese
¾ cupwhole milk ricotta cheese
¼ cupgrated parmesan cheese
salt
to taste
Instructions
Step 1
heat up olive oil and add crumbled sausage,then add onions and cook until sausage starts to brown, 6 mns or so.
Step 2
Add harissa and garlic and cook, stiring all the while until harissa is brown, then add wine. scrape any brown bits and then add marinara sauce. Stir and add chicken broth and shredded basil. Bring to a boil and add lasagna pieces.
Cook until lasagna is done, about 15 mns.
Step 3
Meanwhile mix all the cheeses together and set aside at room temperature.
Step 4
Remove soup from heat and skim excess fat from surface. Season to taste. Serve soup in shallow bowls and top each bowls with 1/4 cup of the cheeses and garnish with chopped basil leaves.
