Instructions
Step 1
Drizzle olive oil in a medium sized pot at medium high heat
Step 2
Add your diced onion and minced garlic into the pan and cook for about 5 mins or until onions are tender
Step 3
Peel and slice your carrots. Peels and diced all your potatoes into 1 and 2 inch chunks.
Step 4
Add potatoes,carrots and your drained can of chickpeas into the pan with your onions
Step 5
Sprinkle your curry powder and salt over everything and combine until all your vegetables are well coated.
Step 6
Cook for a few minutes then add in your vegetable broth. Add until it covers your vegetables half way.
Step 7
Cover the pot with a lid and allow it to come to a boil. Once it starts to boil turn the heat down to medium/low heat (about a 3 or 4)
Step 8
Cook with lid on for about 30 minutes stirring occasionally till the potatoes start to break down and chickpeas are tender
Step 9
Garnish with chopped cilantro and serve hot with rice or flat bread
