Ingredients

2 Tbspextra virgin olive oil
1onion
small, diced
4stalks celery
diced
10 ozbaby carrots
12 ozportobello mushrooms
sliced
2green peppers
diced
2 x 28 ozcans diced tomatoes
2 x 10 ozfrozen green beans
2 x 10 ozbroccoli florets
1 x 10riced cauliflower
1 quartbeef broth
1 bunchfresh parsley
finely chopped
4 Tbspred wine
¼ cupa1 sauce

Instructions
Step 1
Use large dutch oven or stock pot. Saute onions, celery, carrots, and peppers until onions start to caramelize. Add mushrooms and saute 5 more minutes. Then add all the rest of the ingredients and bring to a boil. Reduce heat and simmer on low for at least an hour. Check seasoning while cooking and salt and pepper to taste.
