Instructions
Step 1
Salt skirt, cut into chunks and brown. Then remove from pan
Step 2
Deglaze and reserve liquid
Step 3
Brown bacon in same pan. Then remove and add onion, saute until soft
Step 4
Add garlic and chillies, saute until soft
Step 5
Add spices, after toasting and grinding whole spices
Step 6
Add tomato paste, Worcester sauce
Step 7
Roast tomatos, peppers and chillies in oven, blend, then add to pan
Step 8
Add Guinness and lamb stock
Step 9
Add meat and bacon back into pot
Step 10
Simmer for 4 hours
