1 ½ tablespoonsolive oil

1 tablespoonminced ginger
garam masala

1 cuplow-sodium chicken broth
Fresh cilantro
for garnish

Instructions
Step 1

1. In a large pot, heat the olive oil and sauté the chopped onion, garlic, and ginger until softened.

2. Add the chicken pieces and cook until lightly browned.

3. Stir in the red lentils, diced tomatoes, spinach, carrots, and green bell pepper along with the spices.

4. Pour in the chicken broth (add a splash of water if needed) and simmer for about 30 minutes until the lentils and chicken are tender.
