Instructions
Step 1
Heat oil over a medium heat. Cook onion, garlic and ginger until beginning to soften
Step 2
Once softened, add the lentils, curry powder and vegetable stock. Bring to a boil and simmer for 15-20 mins until the lentils are tender/breaking down
Step 3
Stir the coriander and coconut yoghurt into the dahl. Serve.
