Instructions
Step 1
Heat half the oil in a large pan over medium heat. Add chicken and cook for approximately 5 minutes each side until golden brown. Remove from heat and set aside.
Step 2
Add remaining oil, mushrooms and onions to the pan and cook for 5 minutes.
Step 3
Stir in the garlic, thyme and salt and heat for a further 2 minutes.
Step 4
Combine chicken stock and soy sauce and pour 3/4 of it over the mushrooms, stirring.
Step 5
Add cornstarch to the remaining broth and soy sauce and whisk until no lumps remain. Pour this over the mushrooms and stir to combine.
Step 6
Allow to simmer for 2-3 minutes and then add chicken. Reduce the heat to low, cover, and cook for 10 more minutes.
Step 7
Meanwhile, bring a pot of water to boil. Add potatoes and reduce heat to medium. Cook for 15-20 minutes or until potatoes are easily pierced with a knife. Drain. Add milk and mash until smooth.
Step 8
Cook broccolini by adding to a small pot of boiling water and cooking for 5 minutes. Drain.
Step 9
Divide mash into two serves. Top with broccolini and chicken with mushroom gravy. Store leftovers in the fridge.
