Ingredients
4 servings
1.5 lbsChicken breast
cubed
2 Tbsolive oil
4 clovesgarlic
mashed
¾ cupsun-dried tomatoes
in oil, drained
2 tspitalian seasoning
2 tsppaprika
1 tspground black pepper
½ tspkosher salt
1 cuporzo
2 ¾ cupchicken broth
or water
¾ cupfull fat coconut milk
or heavy cream
2 handfulsfresh spinach
¾ cupparmesan cheese
freshly grated
Instructions
Step 1
Pat chicken dry and cut into cubes. Heat olive oil in a large, deep skillet over medium high heat.
Step 2
Add chicken to the skillet and cook for 2-3 minutes until the edges start to cook. Add sun-dried tomatoes, garlic, Italian seasoning, paprika, salt, and black pepper. Cook for 3-4 more minutes.
Step 3
Stir in orzo and chicken broth. Reduce heat to medium, cover, and cook for 12 minutes, stirring occasionally to prevent sticking.
Step 4
Once orzo is cooked, stir in coconut milk or heavy cream and spinach. Cook for 1 minute until spinach wilts.
Step 5
Add parmesan cheese, stir, and remove from heat. Plate and enjoy.
