Air Fryer Shiitake Mushrooms

I made this delicious twist on an Asian style dish that I have been cooking for years. But I swapped my usual beef mince for Shiitake mushrooms, and it was delicious.

Step 1
I like to wipe my mushrooms, to help remove some of the dirt. Then cut them in half, in similar size pieces and set aside.
Step 2
Grab a small bowl and mix together your soy sauce, ginger paste, garlic paste, honey and sriracha. If you like your food spicy then add a little more of this. Then mix the ingredients together well. In a larger bowl add in your mushroom and pour over your sauce, use a spatula and stir until all the mushrooms are coated.
Step 3
Set your air fryer to 190c and add the mushrooms directly into your air fryer basket. And cook for 10 to 12 minutes, or until your mushrooms are cooked and begin to slightly brown at the edges. Give your mushrooms a stir half way through.
Step 4
So while your mushrooms are cooking, thinly slice your spring onions for the garnish along with your fresh red chilli. Just before your dish has finished cooking, pop your rice in the microwave and cook as per instructions.
Step 5
Finally carefully remove your mushrooms from the air fryer basked and serve your air fryer shiitake mushrooms on a bed of warm rice, and sprinkle over the spring onions and red chilli along with a scattering of sesame seeds.
