Keto Meatballs and Flat Bread

Instructions

Step 1
In a microwave safe bowl, measure 2 cups mozzerella and heat in 30 second increments until soft and melty
Step 2
allow melted cheese to cool for 30-60 seconds and add in 2 egg yolks, garlic powder, Italian seasoning, and onion powder (spices to taste) and mix until well combined.
Step 3
Preheat Oven to 350 and prepare a cookie sheet lined with parchment paper. I like to spray the parchment with pam to prevent sticking
Step 4
Roll or pat the dough to about 1/2 inch thickness (I either roll into a rectangle or circle typically depending on what I am making the flatbread for).
Step 5
Pop into oven and bake for 15-20 minutes until firmed up and just slightly golden brown on the top. If I am using this for dipping or scooping, I usually will also finish off in the broiler for a deeper hue.
Step 6
In the meantime, mix 1 pound of bison, the listed seasonings to taste (garlic powder, onion powder, and Italian Seasoning are my preference, but you can use what you prefer), 1 egg, and ½ cup grated or shredded parmesan.
Step 7
Form the meat mixture into balls, place on parchment paper in the air fryer at 400 (F) and cook for 15-20 minutes, turning at least 2-4 times during the cooking process
Step 8
Warm your choice of marinara, we prefer Rao's since it has lower sugar.
Step 9
Cut your flat bread into the desired shape for serving.
Step 10
Plating suggestion, you can cut the flat bread into wedges around meatballs placed in the center of the bowl or plate and then top the center with marinara or allow the marinara to act as a "bed" of sorts. Nothing fancy, just fun.
