Air Fryer Salmon Fillets

These perfectly crispy salmon fillets with roasted baby new potatoes, tender asparagus, and a creamy yogurt dressing are the ultimate air fryer dinner. Sometimes you just need to make something quick and easy for lunch or dinner and this dish is perfect. So simple and delicious, plus, it is ready in just 15 minutes!

Instructions

Step 1
start by patting dry your salmon fillets with kitchen roll and spray with olive oil, then set aside.
Step 2
Chop your baby new potatoes making sure they are all a similar size; this will ensure a more even cook. Pop into a bowl and spray with olive oil, giving them a shake, then season well.
Step 3
Add your potatoes and salmon into your air fryer and set to 190°C. Then cook for 12 to 15 minutes, or until the salmon is cooked throughout and the potatoes are soft and starting to brown, stirring the potatoes a few times throughout.
Step 4
While the salmon and potatoes are cooking, you can make your yogurt dip. In a bowl, mix your yogurt, half a juice of a lemon, and your handful of chopped parsley. Season and stir.
Step 5
To prepare your asparagus, chop the ends off and spray with a little olive oil. Add them when you have 4 minutes left of cooking time.
Step 6
Serve with your yogurt dressing, a squeeze of lemon on your fish, and some crusty bread if you choose.
