Air fryer stuffed tomato is a simple dish that you can have as an appetiser or as a main dish for any occasion. They are quick to make with the air fryer and are filling and so tasty!

Step 1
I cut the top off my beef tomato and scooped out the middle (saving the inside for a pasta sauce). Then I soaked a cup full of cous cous in vegetable stock.
Step 2
I fried up half an onion I had left over from last night, half a pepper and a quarter of a courgette (great way to use up bits from the fridge) a sprinkle of paprika, garlic powder, salt and pepper and mixed it with the cous cous.
Step 3
I stuffed my tomato with the veggie filling then I added a sprinkle of panko bread crumbs. And placed it on baking parchment and into my air fryer drawer on 180c for around 10 minutes. Be careful when removing your stuffed tomato from the air fryer.
Step 4
Then I served my air fried stuffed tomato with a green salad and a scatter of pine nuts.
