Ingredients

1 tablespoonolive oil

1onion
medium, finely chopped

2carrots
diced

2celery stalks
diced

3garlic cloves
minced

1 cupdried beans
a mix of kidney, pinto, and black beans, soaked overnight, or 2 cans 15 oz each, drained and rinsed

4 cupsvegetable stock
or chicken

½ cupwhiskey
choose a smooth, flavorful one

1 x 14 ozcan diced tomatoes

1 teaspoonsmoked paprika

1 teaspooncumin

1bay leaf

Instructions
Step 1
In a large pot or Dutch oven, heat the olive oil over medium heat. Add the onion, carrots, and celery. Cook for 5-7 minutes until softened. Stir in the garlic and cook for another 30 seconds until fragrant.
Step 2
Carefully add the whiskey to the pot and stir, scraping any browned bits from the bottom. Let the whiskey simmer for 2 minutes to allow the alcohol to cook off, leaving behind its rich flavor.

Add the soaked (or canned) beans, stock, diced tomatoes, smoked paprika, cumin, and bay leaf to the pot. If using smoked sausage or ham, add it at this stage. Stir everything to combine.
Step 4
Bring the soup to a boil, then reduce the heat to low. Cover and let it simmer for 30-40 minutes (or until the beans are tender if using dried beans). Stir occasionally and adjust the seasoning with salt and black pepper as needed.
