Banana Date Blender Muffins

Instructions

Step 1
Pre-heat oven to 350° F (~176° C) and grease a muffin tin or prepare silicone muffin cups.
Step 2
Pit the dates if needed and soak in 1/2 cup very warm water for about 5 min. Then drain the water
Step 3
If you're using frozen bananas defrost in the microwave until soft.
Step 4
In a high speed blender or food processor, blend eggs, dates and bananas until smooth. May need to add 2 TBSP water or preferred milk of choice if it is hard to blend and very thick.
Step 5
Add oats, cinnamon and baking soda blend until incorporated. Just pulse a few times, try not to overblend. The oats will still be slightly lumpy (it does not need to be "smooth")
Step 6
Add ~2 tbsp of batter to a greased muffin tin or non-stick silicone muffin cups. Be careful not to overfill.
Step 7
Bake for about 20-25 minutes (depending on your oven and altitude) until lightly brown on top or until a toothpick comes out clean. You may want to check on these at 15-18 min if you live at lower altitude or your oven runs "hot."
Step 8
These muffins may turn darker over time due to the dates and cinnamon. Serve with warm butter and enjoy!
