Instructions

Step 1
Add sweet potato fries to an airfryer at 200 degrees Celsius. Bake for 12 minutes or until golden and crispy
Step 2
Diced onion, tomatoes, cucumber and pepper. Mix tomatoes, cucumber and 1/4 of the onions together
Step 3
In a pan, add half of the onion and fry for two minutes before adding the beef mince. Cook for two minutes and add 2 tbsp taco seasoning. Add corn and cook for an additional two minutes until browned
Step 4
Mash the avocado in a bowl together with 1 tbsp lime juice, 1/4 of the remaining red onion and 1 tbsp taco seasoning. Set aside
Step 5
Assemble the bowls. Start with the fries, ice berg lettuce, minced beef mixture and then the avocado and salad mix. Enjoy with some sour cream
